I love fruits and vegetables but I don't like having to always wait till they are in season. I purchase frozen fruit and vegetables to keep in my freezer for those times I don't have the fresh on hand. Wild blueberries are smaller than the cultivated ones and have twice the amount of antioxidants. Which shows that smaller can be better. I found these little blueberries to have a lot of flavor. As you can see from the photo above, the berries hold up when defrosted.
I recently picked up a package each of blueberries and raspberries. I decided to use them in two different ways; one uncooked and one baked to see how well they held up. For the uncooked way I made smoothies with both the blueberries and raspberries. For the baked way I opted to make lemon blueberry muffins. I used a packaged muffin mix, added a cup of blueberries and lemon zest, then baked as directed. The muffins smelled enticing, looked appetizing and they tasted delicious! I will not hesitate to use Wyman's frozen fruits in my recipes since I know the texture and taste will hold up well.
